Ingredients

1 lb fresh watermelon, seedless is best
2 Tbs granulated sugar
2 Tbs fresh lemon or lime juice.

Instructions

Cut watermelon into large chunks, discarding the rind (or save and pickle it for a tangy southern treat.)

Combine watermelon with sugar and lemon or lime juice in a blender and purée until smooth.

Strain and pour into a baking pan. Cover and freeze for 2-4 hours, removing from the freezer each hour to scrape the mixture with a fork or spoon to create a texture similar to a snow cone.

To serve, give the granita a quick scrape, spoon into bowls and season as desired.
