You might not think of Great Britain when you hear the words “fine dining.” I certainly do not. But at Core, chef Clare Smyth, one of only 12 women ever to have held three Michelin stars, is trying to change that perception. Her cookbook has recipes, of course, but like many chef-written tomes, I find it more of a place of inspiration than a resource for getting dinner on the table. Every dish is artfully photographed and it’s clear that Smyth is perfectionistic about her recipes and techniques, and passionate about the local produce around her.
