MiFlavour: Spokane's Avant Garde French Bakery

MiFlavour's flagship store takes its cues from contemporary French retailers, with mirrored surfaces and video screens that tempt you with all of the bakery's sweet desserts. The aroma of coffee and chocolate greets customers as they peruse the carefully curated display cases, full of locally-crafted pastries, gelato, macarons and more!

Whether you have never been to France or are always trying to find a way back, Ella Piskun, husband Max, and their team at MiFlavour have saved us the time and price tag of traveling all the way to Paris by bringing some of their favorite classic and contemporary French pastries to Spokane. In the few years since launching, the Piskuns have grown MiFlavour from a simple macaron operation—not that there’s anything simple about making classic French macarons—to a company that makes avant garde tarts, gelato, chocolate and honey.

Spokane locals, Ella, the culinary genius, and Max, the entrepreneur, had a dream to bring their love of French goodies and talents to their friends and neighbors. Piskun believes that the epitome of beautiful and decadent desserts lies in France. Originally, Ella started in the food industry working at other bakeries and shops building up her talents. From that, she knew she wanted to bring something fresh and exciting to her hometown.

“American desserts have a huge market here, but what about something different?” she says. “I was nervous to open a place as unique as this, but I knew that it would be worth it.”

From the Seine to Spokane

Starting out, they rented a commercial kitchen, and as they grew, they opened their current location on Sprague in November of 2019. With five years under their belt, they have enjoyed the local customer market. The warm welcome and the success they have had over the years has been wonderful.

“Even through the pandemic, we were surprised to see so many people support us and make an effort to keep us going.” Ella shares. Being a part of the community is one of their favorite parts of being in Spokane. They could have opened anywhere, but the choice for them was clear–keep these European treats close to home.

At MiFlavour they make everything from scratch. “It’s extremely difficult, but we do it. There are so many shortcuts we could do with pre-made mixes, but there is pride in what we do,” Ella says, noting that going back in the kitchen and making a fresh macaron or locally sourced coffee is what gives their shop the authenticity and integrity the community and her business deserves.

The Piskuns debuted Volonti gelato in the summer of 2020. Available for sale at local grocery stores, one must stop by the bakery in order to enjoy this ice cream in one of MiFlavour’s signature black waffle cones. Vanilla flavored and charcoal-infused to get the right shade of matte black, this sweet treat is beautiful to look at and hard to beat in taste and style. And in the winter, MiFlavour offers a full coffee bar including signature drinks like the Ruby Rose, with notes of rose water with ruby chocolate and a rose meringue on top.

It doesn’t end there as MiFlavour’s online store offers shipping across the nation, making them a one-stop shop for locals to grab something to enjoy themselves and make gifting easy for friends and family across the country. While they always have an eye towards the contemporary, MiFlavour is a must-taste place that has become a Spokane classic in its brief history.
