GeGe’s Vegetable Soup

GeGe’s Vegetable Soup

“As a child, my Mom always served this soup with toast. I thought I had died and gone to heaven.”

Ingredients

1 Large sweet onion, chopped

4 cloves of garlic, chopped

2 Tbsp olive oil

2 Tbsp butter

6 carrots chopped

8 Red Potatoes chopped

4 celery stalks chopped

1/2 head of cabbage chopped

1 pint water/wine

1/2 gallon of V-8 juice

1 quart chicken broth (or broth of choice)

salt and pepper to taste

Instructions

Use a large soup pot. Heat and melt butter and olive oil. 

Sauté onion and garlic. 

Add the water (I use white wine if I have an open bottle.)

Add all the vegetables along with the V-8 juice and broth. 

Season with salt and pepper. 

Cook for 30-40 minutes.
