Billie’s “Zero-Waste” Apple Pie

Whole Wheat Pie Crust Ingredients

1 Cup All-Purpose Flour

1 Cup Whole Wheat Flour

1 tsp salt

12 Tbsp unsalted butter, cubed

1 Tbsp Apple Cider Vinegar

Up to ½ Cup ice water

Instructions

Cut butter into 1 inch chunks, spread out, and allow to freeze while gathering the rest of the ingredients, at least 20 minutes.

Combine flours and salt in a bowl, apple cider vinegar and enough water for the mixture to be shaggy. Chill for at least 10 minutes.

Once everything is sufficiently cold, cut butter and flour together in a stand mixer or food processor until the butter is between the size of walnuts and peas. Overmixing will result in a dough that breaks instead of flakes apart, like a shortbread cookie, so be careful not to let the butter get too small.

While the mixer is on, add remaining water quickly, trying to pour it evenly throughout the bowl. Mix only until the dough barely comes together. It’s fine if there are some dry bits in the bottom of the bowl, you can fold those in by hand. As the dough sits, it will continue to hydrate, and those dry bits will meld with the rest.

Portion dough into discs, then plastic wrap. Can be kept frozen for up to 3 months.

Apple Pie Filling Ingredients

2 lbs apples, peeled and cored - Granny Smith, Gala or a mix

1 tsp lemon juice

½ cup + 1 tbsp sugar

1 tbsp + 2 ¼ tsp corn starch

¼ tsp salt

2 tsp cinnamon

½ tsp nutmeg

½ tsp ground anise

1 egg white

sliced almonds, optional

2 whole wheat pie crusts

Instructions

Cut apples into quarter-inch slices and mix with lemon juice, sugar, corn starch, salt, and spices. Dump into a prepared pie crust and top with the second pie crust, crimping the edges. 

Allow to chill for at least 15 minutes in the fridge or freezer while preheating the oven to 425 degrees.

Brush with egg wash then sprinkle with sugar and almonds. 

Bake for 15 minutes at 425, then decrease oven temperature to 375 and bake for an additional 25 minutes or until filling is bubbling in the middle.

Allow to cool completely before serving.
