As the drink scene grows in Spokane, vintage-style drinking vinegars are finding their way back into the mix. Drinking vinegars serve as a versatile addition to any beverage with tart, fruity and sour flavors.
Beet Shrub
Ingredients
5-6 beets
1 cup Bragg’s apple cider vinegar (or another vinegar of your choosing)
1 cup sugar
Ginger (peeled)
1 tsp black peppercorns
Instructions
Peel and cut the beets into cubes. Combine all ingredients in a medium saucepan and simmer over medium heat for approximately 20 minutes. Strain the solids out and bottle the remaining shrub.
Cardamom Pear Shrub
Ingredients
6 ripe pears
2 green cardamom pods
¾-1 cup brown sugar
1 cup Bragg’s apple cider vinegar
Instructions
Wash, cut and core the pears. Mash them in a large nonreactive bowl with the sugar, add the cardamom pods and allow the mixture to sit in the fridge for 24 hours. After 24 hours, add 1 cup apple cider. Allow the mixture to continue to steep for one week. Strain the solids out then bottle the remaining shrub.
